Gluten Free Vegan Oat Pumpkin Muffins

Makes 12

Ingredients:

  • 2 cups bobs gluten free flour
  • 2 tbsp organic ground flax seed corn milled
  • 1/2 cup of  coconut oil
  • 1 can Trader Joe’s organic pumpkin
  • 1 cup of unsweetened vanilla almond milk
  • 1/2 cup of apple sauce
  • 1/2 banana
  • 1/2 cup truvia calorie free sweetener
  • 1/2 tsp of salt
  • 3 tsp baking powder
  • 1 cup gluten free oats
  • 2 tsp of cinnamon
  • 1 tbps gluten free vanilla

Preheat oven at 350 degrees. Prepare all dry ingredients first and then fold in your wet ingredients. Using a wooden spoon mix all the ingredients. Make sure the batter is still a bit lumpy. Place in a 12 tin muffin tin and bake for about 25-30 mns.

Vegan Gluten Free Peanut Butter Chocolate Muffins

Makes 12

Ingredients: 

  • 2 cups bobs gluten free flour
  • 2 tbsp organic ground flax seed corn milled
  • 1/2 cup of  coconut oil
  • 1 tbsp gluten free/vegan powered peanut butter
  • 1 cup of unsweetened vanilla almond milk
  • 1/2 cup of apple sauce
  • 1/2 banana
  • 1/2 cup truvia calorie free sweetener
  • 1/2 tsp of salt
  • 3 tsp baking powder
  • 2 tbsp organic gluten free unsweetened cocoa powder
  • 1/2 cup of vegan gluten free carob chips

Preheat oven at 350 degrees. Prepare all dry ingredients minus the carobs chips first and then fold in your wet ingredients. Using a wooden spoon mix all the ingredients. Make sure the batter is still a bit lumpy. Place in a 12 tin muffin tin, take the 1/2 cup of carob chips and sprinkle them onto the uncooked batter in the muffin tin. Place in the oven and bake for about 25-30 mns.

I am not worrying about the calories when baking these vegan treats, I am more conscious of what the ingredients are and keeping them clean and whole. Hope you enjoy them… What I have been doing is taking my basic vegan and gluten free muffin mix and then choosing to add my favorite ingredients. You can change it up by adding sweet potatoes or even berries and chia seeds… experimenting is half the fun!
