Less Is More….

Sometimes I find myself running short of time. As a mother of three, time can be a precious thing.. Something I am not always willing to give. Especially to recipes or even a smoothie! But that can’t become an excuse to eat fast and cheap. Today is the perfect example not only did time seem to be flying by but I felt myself dragging along and very sore from yesterday’s workout and my early morning run. (better SORE than sorry!) So when it was time for lunch I needed to be able to pretty much grab and eat… Luckily I remembered an image I had seen passed around on Facebook. One I think even I shared, because it looked so good. I couldn’t remember the recipe but I remembered the basics. A sweet potato filled with a mix of beans and kale. So I grabbed a couple of my favorite spices and warmed up the kale and beans together (took less than 5 mns) and microwaved a sweet potato and poof yummiest, quickest lunch yet!

What’s great about this recipe is not only is it satisfying to the taste but its visually satisfying.. and what can I say the prettier something is the more likely I am to eat it!

Sweet Potato with Curried Kale and Beans

  • 1 sweet potato ( you can by the pre wrapped ones that are ready to heat)
  • 1/2 cup of mixed beans (garbanzo, kidney, white and black beans)
  • 1/2 cup of kale
  • 1/4 cup of water
  • 1 tsp yellow curry powder
  • 1 tsp ginger powder
  • 1 pinch of cayenne pepper
  • 1 tsp tumeric

In a small sauce pan mix your beans, water and kale. Bring to a boil.  Place on simmer and add your spices. let stand for a few minutes while you cook your sweet potato, should microwave on high for 8 mns (depending on microwave) & enjoy!

  • 1 scoop vanilla protein powder of choice
  • 1 tbsp powered peanut butter
  • 1 tsp instant coffee of choice
  • 8 oz of almond milk
  • 1/2 packet of  truvia (calorie free stevia sweetener)
  • 4 ice cubes

Place your dry ingredients in a Blender Shaker bottle along with dry ingredients, add ice and almond milk. Cover and Shake..
