Getting My Groove Back

progressUPDATE: unfortunately I feel as if lately everything’s been out of control. I’ve had good days, bad days, and in between. I definitely needed to get my self back on track and in the right mind set. It really is MIND OVER MATTER when it comes to making changes in your life. If your mind isn’t happy and leveled, then all hell brakes loose.

On the left is my main before photo I was 145 lbs and so so unhappy and unhealthy! The middle photo was three months after at about 106 lbs and the photo on the far right is 115 lbs… The middle photo was three months of kicking ass, day in and day out. Eating 100% clean, running about 8 miles per day, working out in the evening a variety of circuit exercises. And all with out the gym… What’s changed… No I don’t have less time, my availability has stayed the same. No, life hasn’t gotten worse… Same stresses as normal.

I think I may have gotten a bit to comfortable, and started finding it easier to skip workouts. Finding excuses for eating whatever was available etc.. So to change that, I got my mind back in the game and set on success. This is a journey so I know that there will be ups and downs and set backs. But what sets people like us apart, is that we won’t stop trying… The more we make it a part of our lives, and our choices and less about a diet and something temporary the greater our success. I wasn’t running 8 miles with a deadline, I was running 8 miles because I am a runner. I always have been and truly enjoy it. I wasn’t working out because I HAD to lose weight but because I battle stress and anxiety and working out helps a lot more than medication. It was making me happy. It just gets easy to get off track and sabotage yourself. Let’s make a pact to stop. STOP the binging, STOP self sabotage, and start SELF LOVE!

We have to remember that we are important too…








One of the new hobbies I have taken up is BAKING.. Vegan Baking that is. Not only has it allowed me to come up with great low calorie alternatives but it keeps the sodium, sugar, carbs and much more lower than average baking. So I can enjoy my treats guilt free…


Vegan Bran Muffins

198 Calories & 42 Carbs

  • 2 1/2 cups of Gold Medal – Whole Wheat Flour
  • 1 1/2 Flax Usa – Organic Golden Flax Seed Cold Milled
  • 3 cups Bran Flakes Cereal
  • 5 oz Treetop – Naturally Sweetened Apple Sauce
  • 8 oz Silk – Organic Soymilk (Unsweetened)
  • 1 1/2 cups of Ocean Spray – Cranberries, Dried Small Package
  • 1 tbsp Nutiva / Tropical Tradition – Coconut Oil, Organic
  • 1/2 cup Trader Joe’s – Organic Maple Syrup (Grade A Dark Amber)

First grab your cups of Bran flakes or Bran cereal (if you change the cereal remember to calculate the calories) and set it in a bowl along with the soy milk. Let it sit for about 20 mns until the bran flakes are really mushy.

Then add the other ingredients starting with dry to wet. I added Dark Amber maple syrup instead of sugar because its good for you and your immune system! place in a 12 tin muffin tin and set in the oven for about 30 mns. And Enjoy!! what’s great is that they are really great and moist and stay well in the fridge, so that if you meal prep they should last the week… (if your family doesn’t eat them first!)

Another Great quick recipe is this great sautee of mixed veggies and tofu that you can add to spice up your spaghetti! My family loved it and didn’t even question what was in it!


Spiced Up Spaghetti

feeds 10

  • 1 package diced tofu
  • 4 cups kale
  • 2 red bell peppers
  • 2 tomatoes
  • 2 whole green zucchinis
  • 1 tbsp extra virgin olive oil

First saute your tofu with a few dashes of oregano and fresh basil! then add the rest of your veggies cook them to your preference. I like mine a bit crispy and more fresh! then add to your favorite spaghetti sauce, whether its homemade or Newman’s organic..
