Take a bite

Sometimes it can be hard to get your kids to eat healthy. My theory is to start them young and cook with flavorful food and spices. No one can deny a tasteful meal full of color, bold flavors and rich spices.  I also believe that educating your kids in the benefits of a plant rich diet is important. Kids are a lot wiser than we give them credit for and it’s natural to want to grow big & strong. It is the media that confuses our kids of what food really is. They get tricked into thinking food is meant to be bland, fake and cheap. It’s up to us to teach them that food is nutrients and a source of life not necessarily a reason to live. Here’s a yummy recipe that is quick, easy, and kid friendly.. 

Turmeric Rice and Greens

  • 1 cups of Basmati Indian rice 
  • 2 cups of water 
  • 2 tbsp turmeric 
  • 1 tbsp italian seasonings
  • 1/4 cup chopped fresh parsley
  • 2 cups of mixed veggies of choice ( we choose shitake mushroom, green beans, corn, snap peas and broccoli)
  • 1 cup cooked mixed black & pinto beans
  • 1 tbsp coconut oil
  • sliced savory tofu (prepackaged from trader joes) 
  • pinch of lemon pepper
  • 1/2 lemon

In a medium sauce pan place your rice and water, along with the turmeric and Italian seasoning, bring to a rapid bowl, stir a few times than place on simmer for about 15 mns or until there is no longer any water in the rice and it is yellow. 

in a smaller fry pan,  simmer your veggies and tofu in the coconut oil just enough to be warm but still crunchy and full of life. 

Once a week I like to make a few pots of fresh beans that I can use through out the week. I love the taste of fresh cooked organic beans. My favorite are black and pinto, so I reheated the previously cooked beans to add to the dish.

Place in all your ingredients in a bowl and top with the fresh parsley. Top with a pinch of lemon pepper and a squirt of fresh lemon.
